Toby selects and roasts very distinctive, high altitude coffees from around the world. Coffee beans have distinct qualities unique to each coffee plantation or estate, arising from differences in climate, situation and processing methods. These 'origin' coffees can stand on their own without blending. You can distinguish one bean from another, and also notice subtle changes that occur in flavour and aroma from season to season. Our team of cuppers are constantly searching for the best seasonal crops. These beans make up our espresso blends as well. We batch roast each origin separately and post roast blend so we can achieve the best flavour profiles. Hitting a roasting sweet spot where we retain the natural flavours and aromas yet develop the body and acidity for a sweetly balanced cup is our goal for you to enjoy.
